  Secrets from the Chef Simple Chilled Tomato Soup with Grilled Grapes and Cilantro

Ingredients
  • Fresh red tomatoes – 3 pounds
  • Olive oil – 4 tablespoons
  • Garlic cloves – 4 each
  • Fresh thyme sprigs – 5 each
  • Salt and fresh ground pepper
  • Vegetable stock – 1 quart
    This versatile stock can be easily made by combining some rough chopped onion, peeled carrot, and fennel in a pot with water and fresh peppercorns. Bring to a boil then immediately strain and chill.
  • Green or red grapes – 18-20 each on skewers
  • Fresno jalapeno – 1 each
  • Cilantro, micro or small leaves work best – A few sprigs
