Napoli with Viola Buitoni

Join Viola Buitoni for a Tour of Five Italian Cities as she shares her local spin on dishes from five of Italy's food centric cities. The fifth and final stop on our five city tour is Napoli.Naples' distinctive cooking is likely the richest and most varied of Italy and harks all the way back to Greco-Roman times. The coming and goings of kings and courtiers of the many different cultures that ruled over the city and its outlying territories through the centuries determined a marked gap between an aristocratic and popular cuisine. The first is distinguished by an international, haute cuisine flair, with elaborate dishes and rich, non-indigenous ingredients, while the second is based on the simpler agricultural gifts of the local lands. Ingredients for the class are sourced from local farmers' markets and Viola's favorite Italian vendors. Work with great products and discuss the sourcing and selection of said ingredients.
